Banana Chocolate Chip Cookies

Lately, I've had a lot of ripe bananas. I usually make banana bread or banana muffins but I'm a little tired of always making the same thing. So, my first attempt was a recipe for healthy banana bars (like granola). They were a big fail. Then, I came across a recipe on allrecipes.com for Banana Chocolate Chip Cookies. So I gave them a try. I love them! Even my kids love them! They are super soft and probably my new favorite cookie. Want to try them? Here is the recipe

2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup white sugar
2/3 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 cup mashed bananas
2 cups semisweet chocolate chips

Preheat oven to 400 degrees F. Mix flour, baking powder, salt, and baking soda together, and set aside. Cream the butter with the sugar until light and fluffy. Beat in the eggs and vanilla. Mix in the mashed bananas. Add the flour mixture, and stir until just combined. Stir in the chocolate chips. Drop by spoonfuls on cookie sheets. Bake in preheated oven for 12 to 15 minutes.

Enjoy!
